SOUTHWEST MEXICAN PIZZA

Recipe: Southwest Mexican Pizza

Ingredients                                                        

  • 1 (lb, 14 oz.) can refried beans
  • 1 pound ground beef cooked
  • 1 pound Jack cheese, grated

  • 2 to 3 green onions, chopped
  • 2 bell pepper, chopped
  • 1 1/2 (small) can jalapeno peppers, chopped
  • 1 (small) can olives, chopped
  • 1 avocado, chopped
  • 2 small tomatoes, chopped
  • tortilla chips, to serve

Instructions

  1. On a large pizza pan, layer ingredients in order listed, except avocado, tomatoes and tortilla chips.
  2. Bake at 350 degrees for 15-20 Minutes.
  3. Remove from oven.
  4. Sprinkle with avocado and tomatoes.
  5. Serve with tortilla chips.
  6. Serves 10 – 12

MEXICAN DESSERT

Recipe: Flan De Naranja Con Almendras – Orange Custard With Almonds

Ingredients                                                                     

  • 1 quart half-and-half or light cream
  • 1 teaspoon vanilla
  • 4 whole eggs and 2 egg yolks

  • 2 tablespoons sugar
  • 1 teaspoon grated orange rind
  • 1 cup sugar
  • 1/4 cup orange juice
  • 1/2 cup water
  • 2 cups almonds, toasted

Instructions

  1. Scald cream; cook until it reduces to about 3 cups.
  2. Add vanilla and set aside.
  3. Beat together eggs and egg yolks, orange juice, 2 tablespoons sugar and orange rind.
  4. Gradually pour hot cream mixture into egg mixture, stirring vigorously.
  5. Set aside.
  6. Dissolve 1 cup sugar in water and heat this syrup in heavy skillet until golden brown.
  7. Mix in toasted almonds.
  8. Pour this mixture into six custard cups and tip and turn cups until the inside of each is evenly coated.
  9. Let caramel set.
  10. Pour custard into cups; set cups in pan of hot water.
  11. Bake at 325° F for about 25 minutes or until knife inserted near center comes out clean.
  12. Cool and unmold custards with bottom sides up on small individual dessert plates or cups.
  13. Serves: 6
