Recipe: Flan De Naranja Con Almendras – Orange Custard With Almonds

Ingredients
- 1 quart half-and-half or light cream
- 1 teaspoon vanilla
- 4 whole eggs and 2 egg yolks
- 2 tablespoons sugar
- 1 teaspoon grated orange rind
- 1 cup sugar
- 1/4 cup orange juice
- 1/2 cup water
- 2 cups almonds, toasted
Instructions
- Scald cream; cook until it reduces to about 3 cups.
- Add vanilla and set aside.
- Beat together eggs and egg yolks, orange juice, 2 tablespoons sugar and orange rind.
- Gradually pour hot cream mixture into egg mixture, stirring vigorously.
- Set aside.
- Dissolve 1 cup sugar in water and heat this syrup in heavy skillet until golden brown.
- Mix in toasted almonds.
- Pour this mixture into six custard cups and tip and turn cups until the inside of each is evenly coated.
- Let caramel set.
- Pour custard into cups; set cups in pan of hot water.
- Bake at 325° F for about 25 minutes or until knife inserted near center comes out clean.
- Cool and unmold custards with bottom sides up on small individual dessert plates or cups.
- Serves: 6
